BTW is there a way within Wordpress/Theme options to have done this or is it a manual change like you suggested that is the only way? <- trying to become better at understanding Wp/Theme capabilities
There's no other way to do this from the theme options I'm afraid -but I am glad you asked! A lot of people on here don't even want to try and learn, they just want to be spoon fed
The style you have chosen was dark but it looks like there was a small WooCommerce conflict with the styling which made the text too dark (WooCommerce is constantly changing small bits here and there which can be a minor pain in the butt)

Problem - the table containing the price, quantity, total etc has a very dark gray font that's very hard to read.
I've looked everywhere I can think of to change that but can't find where.
Please direct me to how/where I can change that font color.

Try this CSS:
#wrapper .woocommerce table.shop_table th, #wrapper .woocommerce table.shop_table td {color:#fff;}Copy and paste it into the Theme Options > Advanced > Custom CSS Code box.
That will make the Woocommerce table text white so it is easier to read
